The Downeast Duckhunter suggested that I might want to have a giveaway for the product that I endorsed in my last post. I got to thinking and figured it was about time that I shared the love and had a give away of my own. I called my buddy Mike Baxter and he has agreed to provide me with three bags of his wood smoking product. He is giving me one bag of Peach chips, one bag of Cherry chips and one bag of Pecan chips for your smoking needs. How do you enter?? Simple!!

As outlined on my blog I smoke all kinds of fish. While my typical routine employs the use of alder, apple and hickory, I am intrigued by the possibility of using more "exotic" wood species for my smoking pleasures.
The Duckman's idea of smoking a fish involved lighting the tail and sucking REALLY hard on the fishes mouth.

Well...let's see. I'm about out of venison/hog roasts to smoke - a difficult personal problem. But going to be doing quite a bit of fishing in the coming months. Smoked mullet. Maybe some kings later in the summer - I would think the pecan would be great for that, actually.
A buddy just gave me a smoker too. It's fate, but I'd hate to use these chips on domestic game. It'll be put to use for sure!!! Ooh, maybe smoked gator in August....possibilities!
Well, this is perfect timing! We tried House of Jerky's smoked salmon last week and have been talking about trying to make some (since we have a freezer full of salmon) but we were missing the key player....a smoker. So guess what Rambob got for an early Father's Day present? A SMOKER!
Win or not...I will patronize Baxter's just because you can't beat the level of service you get from a mom and pop run business plus the referral is from a trustworthy source (I think, haha)
And if Ian wins....I'm definitely keeping my good eye on his blog! I can't wait to see what he comes up with!
